Ingredients:

  • 1 bunch of Parsley – finely chopped
  • 1 Lebanese cucumber – finely chopped
  • 1 Avocado – chopped into pieces
  • 1 Tablespoon of Barberries (found either in a health food store or online)
  • 1 Tablespoon Olive Oil
  • Salt and pepper to taste
  • Squeeze of lemon or lime juice
(Serves around 4 people)
  • Add your protein of choice – e.g meat, fish, chicken or lentils, beans, boiled eggs, tofu or tempeh

Method:

  1. Combine all ingredients together and serve fresh – enjoy!
