If you’ve never tried making energy balls, you’ll be surprised at how easy and fast it is. You don’t even need to bake them; just let your food processor do the work. These little treats are not only easy to make, but they’re also delicious and great for satisfying sweet cravings or boosting your energy levels between meals. They’re packed full of pregnancy and postpartum-friendly nutrients including protein, fibers, healthy fats and carbohydrates which help keep your blood sugar levels stable.
Plus you can make a big batch and freeze them, so you could always make some just before your baby’s due to arrive so that you’ll have a snack ready whenever you need it!
This energy balls recipe is versatile, so if you don’t have some of the ingredients, you can substitute them for others. Feel free to add in a little bit of extra coconut oil or water if they’re too dry. If they turn out too sticky, simply add a little extra dry ingredients until you get a good texture that’s easy to shape.
Ingredients
- 7-8 pitted medjool dates
- 2 tbsp warm water
- 1 cup oats
- ½ cup of natural, smooth peanut butter (or tahini or another nut butter)
- 3 tbsp flaxseed meal or chia seeds
- 2 tbsp cocoa powder or 1 tsp cacao
- 1 tbsp coconut oil
Directions
- Soak dates in warm water for a few minutes.
- Strain the dates out of the water. Add them to the food processor along with the 2tbsp water and process on high for 2-3 minutes until a smooth paste forms. You may need to add another tbsp of water.
- Add the rest of the ingredients. Pulse the food processor until a smoothe dough forms.
- Wash your hands and roll a tablespoon amount for each ball
- Enjoy straight away, refrigerate, or freeze to keep them for longer
